Harvesting
The journey to a perfect cup begins at the source. We meticulously hand-pick only 100% fully ripe coffee cherries, ensuring optimal sweetness and maximum flavor development right from the start.
Screening & Sorting
Following the harvest, the cherries undergo a rigorous water-cleaning and screening process. We meticulously sort every batch, removing impurities and sub-standard beans to guarantee that only the most flawless cherries proceed to the next stage.
Drying & Processing
To preserve the bean's integrity, the coffee is naturally processed and sun-dried on raised beds. This method ensures optimal air circulation to prevent mold, allowing the beans to cure gently under the perfect balance of sunlight and humidity.
Roasting
The roasting process requires exceptional expertise. Our master roasters expertly manage heat and airflow to meticulously develop each batch, ensuring every roast is tailored to perfectly optimize the bean's unique physical structure and inherent flavor profile.
Cupping
Rigorous sensory evaluation is conducted on every roast. Through the professional cupping protocol, we assess the aroma, flavor, acidity, and body, ensuring absolute consistency and quality before the coffee is packaged and delivered to our stores.
Extraction Control
Our baristas are extensively trained to control the extraction process. By calibrating the extraction parameters, they ensure every cup of coffee is always aromatic and balanced.
